I’ve got a couple instrument panels on builds coming up and I thought I’d ask about your favorite way of creating lenses for your instruments

I think there are quite some possibilities to create the lenses. you could put a little drop of clear or resin on top of it and let it cure or stance out tiny circles out of transparent plastic.

i use a thin drop of tamiya craft bond. i think woodglue can work also

Most clear resins turn yellowish with time passing by, so actually not the best way, same to clear epoxy glues.

II use Limino UV Resin clear. It is a UV resin adhesive directly applied for DIY art pendants, earrings, necklaces, bracelets, nail art accessories or similar and is therefore also designed for "outdoor use".
Can't see any yellowish with time.

Do not know it it's available out of Europe.

About how much time are we talking Thomas?

No, I think it's been about 3 years now.
But I don't think any model or color will withstand constant UV radiation from sunlight forever, I could imagine if you want to speak of more than 10 years there can be changes.

If the lense is over black colour dials, slight yellowing is not that big an issue unless it is as dark as clear smoke from Tamiya. The small areas of the markings and needles will not be that noticeable even if it is a little bit yellowish.
