What is a good rivet head diameter to use on a 1/20 scale kit? Thanks!!

Depends on several variables: loading, materials being joined, spacing, etc and with the era in which they were used.
One example I measured was the Gurney Weslake F1 car from the 60s which had 6mm (0.3mm @ 1/20) spaced at roughly 50mm (2.5mm @ 1/20) centres but varying with location, load, etc. Some bodywork rivets can be much larger, some minor brackets can be a little smaller.

Mostly sizes on real cars are between 8mm & 12mm (6mm seems small), so in 1/20 that would be .4mm to .6mm

There are not many rivet like items available at those sizes, but i do have some of these in store. At price Euro 6/set (200pcs in .4 set, 180pcs in .6 set) you could easily buy several sizes and see how they look on the model.
The ones you don't use will surely come in handy one day ;-)

wrong kind of rivet though...
pop rivets are usually flatter and have a small hole.
masterclub do a flatter version as well (and several types of nuts/bolts), that would be a better match for pop rivets.
